irresistíveis

Há semanas que a blogosfera é invadida com o assunto do dia de S. Valentim. Qualquer desculpa para fazer doces cor-de-rosa e em forma de coração está bem para mim.

For week the blogosphere is overrun with the topic of St. Valentine's day. Any excuse to make candy-colored pink and heart-shaped is fine by me. 

Macarons
(para cerca de 50 macarons)

250gr de amêndoa moída o mais finamente possível / 250gr almond flour
250gr de açúcar em pó / 250gr powder sugar
200 gr de claras de ovo (*) / 200gr egg whites
225gr de açúcar / 225gr sugar
75gr de água / 75gr water
Corante vermelho / red food colouring

Ganache de framboesa / raspberry ganache
120gr de framboesas / 120gr raspberries
200gr de chocolate branco / 200gr white chocolate
80gr de natas / 80gr cream

Para a ganache, reduzir as framboesas a puré e levar ao lume com as natas até ferver. Retirar do lume e juntar o chocolate partido em pedaços. Refrigerar durante 2 horas.
Num robot de cozinha misturar bem o açúcar em pó com a amêndoa. Peneirar esta mistura.
Levar ao lume o açúcar com a água. Quando atingir 115º, colocar as claras a bater em castelo na batedeira. Quando o açucar estiver a 120º, verter aos poucos sobre as claras, com a batedeira numa velocidade baixa. Juntar algumas gotas de corante. Deixar arrefecer até aos 50º. Juntar a mistura de amêndoa, mexendo sempre no mesmo sentido.
Colocar a mistura num saco de pasteleiro com um bico de 8mm de diâmetro. Formar os corações sobre um tabuleiro forrado a papel vegetal. Deixar descansar durante 30 minutos. Levar a forno pré-aquecido a 150º durante 12 minutos. 
Deixar arrefecer os macarons no próprio tabuleiro. Recheá-los com a ganache de framboesa. 
Deixar pelo menos uma noite no frigorífico antes de consumir.

Os macarons conservam-se no frigorífico durante 4 dias e podem ser congelados sem perder qualidade, desde que bem acondicionados, durante 3 meses.

(*) Antes se fazer os macarons as claras devem repousar durante uma noite à temperatura ambiente.


For the ganache, reduce raspberries to puree and bring to boil with the cream. Remove from heat and add the chocolate broken into pieces. Refrigerate for 2 hours.
In a blender mix well powder sugar with the almond. Sift this mixture.
Bring to boil the sugar and water. When it reaches 115º, put the egg whites in an electric mixer to beat until stiff. 
When the sugar reaches 120º, slowly pour over the egg whites with the electric mixer in low speed.
Add a few drops of food colouring. Allow to cool to 50 º. Add the almond mixture, stirring in the same direction.
Place the mixture in a pastry bag with a nozzle diameter of 8mm. Form hearts on a tray lined with greaseproof paper. Let stand for 30 minutes. Bring to preheated oven at 150º for 12 minutes. 
Leave to cool on the tray macarons. Fill the macarons with the raspberry ganache. 
Leave at least one night in the fridge before consuming.
