o lago dos cisnes

The Swan Lake.

CISNES DE CHOUX COM MORANGOS / CHOUX SWANS WITH STRAWBERRIES

Massa de choux / Choux pastry:
500gr de água / 500gr water
15gr de açúcar / 15gr sugar
10gr de sal / 10gr salt
250gr de manteiga / 250gr butter
300gr de farinha / 300gr flour
6 ovos / 6 eggs

300gr de chantilly / 300gr chantilly
300gr de morangos / 300gr strawberries

Levar a água a ferver com o sal, açúcar e manteiga. Retirar do lume e juntar a farinha. Mexer bem. Levar novamente ao lume até secar e despegar da panela. Colocar a massa numa batedeira. Bater um pouco para arrefecer. Juntar os ovos um a um.
Para fazer a cabeça dos cisnes usar um saco de pasteleiro com um bico de pasteleiro liso. Sobre um tabuleiro forrado a papel vegetal, desenhar um S com a massa. Para o corpo dos cisnes, utilizar um bico de pasteleiro canelado e, desenhar sobre o tabuleiro forrado a papel vegetal, uma lágrima. Levar a forno pré-aquecido a 180º durante cerca de 20/30 minutos.
Depois de arrefecido, cortar o choux em forma de lágrima do sentido longitudinal. Cortar a metade superior a meio para formar as asas. Rechear com morangos e chantilly aplicado com um saco de pasteleiro com um bico canelado.

To make the head of the swans use a pastry bag with a plain pastry tip. On a tray lined with baking paper, draw an S with the dough. For the body of the swans, use a fluted pastry tip and draw on the tray, lined with greaseproof paper, a tear. Bring to preheated oven at 180 ° for about 20/30 minutes.
Once cooled, cut the choux shaped in teardrop  in the longitudinal direction. Cut the top half in the middle to form the wings. Garnish with strawberries and whipped cream applied with a pastry bag with a fluted tip.
