tarte de chocolate e praliné | praline and chocolate tart


Na mesa de Páscoa tem de haver pelo menos três sobremesas: uma de chocolate, uma com referência ao tema da Páscoa e uma tradicional. Hoje fica aqui uma sugestão para a chocolate.

On a Easter lunch table there must be at least three desserts: one with chocolate, one with reference to the Easter theme and a traditional one. Today here is a suggestion for the chocolate one.





TARTE DE CHOCOLATE E PRALINÉ
CHOCOLATE AND PRALINE TART

sablée:
200gr de farinha / 200gr flour
25gr de amêndoa moida / 25gr grounded almond
85gr de açúcar em pó / 85gr powder sugar
15gr de cacau em pó / 15gr cocoa powder
130gr de manteiga / 130gr butter
1 ovo / 1 egg

ganache:
200gr de chocolate de leite / 200gr milk chocolate
300gr natas / 300gr cream
50gr de praliné* / 50gr praline*

creme de avelã / hazelnut cream:
100gr de natas / 100gr cream
20gr de praliné / 20gr praline

Amassar todos os ingredientes do sablée. Formar uma bola com a massa, envolver em película e refrigerar por duas horas. Estender a massa com cerca de 3mm de espessura e forrar uma tarteira. Cobrir com feijões e levar ao forno a 180º durante cerca de 25 minutos.
Para a ganache, ferver as natas. Verter sobre o chocolate partido em pedaços, misturando até obter uma mistura homogénea. Adicionar o praliné. Colocar a ganache sobre o sablée e refrigerar.
Para o creme de avelã, bater as natas e envolver o praliné. Com um saco de pasteleiro, colocar o creme sobre a tarte.

* Para o praliné, levar 400gr de açúcar com 100gr de água até atingir os 116º. Adicionar 600gr de avelã, mexendo sempre até que esteja caramelizada. Colocar a avelã num silpat para arrefecer. Triturar num robot de cozinha até obter uma pasta. O praliné conserva-se no frio durante alguns meses.

Knead all the sablée ingredients. Form a ball with the dough, wrap in cling film and refrigerate for two hours. Roll out the dough to about 3mm thick and line a tart pan. Cover with beans and bake at 180 º for about 25 minutes. 
For the ganache, boil the cream. Pour over the chocolate broken into pieces, mix until you have an homogeneous mixture. Add the praline. Place the ganache over the sablée and refrigerate. 
For the hazelnut cream, beat the cream and wrap the praline. With a pastry bag, put the cream over the tart. 

* For the praline take 400gr sugar with 100gr water to heat until it reaches 116º. Add 600gr hazelnuts, stirring constantly until caramelized. Place the hazelnuts on a silpat to cool. Grind in a food processor until you have a  paste. The praline is preserved in the cold for a few months.
